Funnel Cakes!

  It only makes perfect sense to me that the minute your kid(s) get home from the last day of school you begin to party like it's 1999.  Yes, I said 1999.  And what I mean by that is you CELEBRATE SUMMER VACATION!!! And the perfect summer treat is funnel cake of course:) 

Funnel Cake Recipe:
1 egg
2 tablespoons sugar
2/3 Cup milk
1 1/4 Cup flour
1/4 teaspoon salt
1 teaspoon baking powder

Pour oil (veggie/canola) in pan and heat to med/high.  You will need a funnel too.  Pour batter into funnel and make a circle and continue to make the circle larger.  Once it's a light brown, turn over and cook the other side.  Take out and place over paper towels.  Once any extra oil is off, shake powdered sugar over and enjoy:)

God's Promise Pancakes

  Last time I made pancakes I put food coloring in them, but only used one color. Boring.  So, I had planned on the next time doing a rainbow design.  As luck would have it, the kids asked for pancakes and I was in the mood to be creative.  Thus..."God's Promise Pancakes" was born:)  The kids loved them!!!  Hayden said they reminded him of God's promise to Noah.  (Genesis 9:12-17) 

  They were super easy to make and I promise you're kid(s) will love them!!! I just divided the batter into small dishes, then added food coloring.  Stir and bake as normal.  And yeah, and serve them with a smile;)  Evie





At the end I didn't have enough to make full one colored pancakes so I decided
to mix and match.

Company's Coming Over

  Nothing says, "Company's coming over" like a HUGE piece of beef!  Not very normal for us here.  We are normally a chicken and fish kinda family.  My apologies to any vegetarians out there by the way;)  I love fast and easy dinners so I thought I'd grab a picture and tell ya folks out there how to make it as well.  You will need a roasting pan with a lid. As well as chuck tender roast, potatoes, carrots, onions, mushrooms, salt, pepper, garlic and water.  However, if you happen to dislike any of these veggies, feel free to leave them out.  Put the meat in the pan, then surround it with cleaned veggies and season it with salt, pepper/garlic.  Fill pan with water (beef broth works well too) til it reaches the top of the meat.(water not pictured in image below)  Cover and place in preheated oven of 325 degrees for 4 hours.  WARNING: Your home will begin to smell AMAZING.  I'll try to take a picture once it comes out of the oven and post later;) Evie

Recipe: Olive Garden Alfredo Sauce

  Today's recipe is from CopyKat.com.  I got this recipe about 9 years ago off this site.  It's super easy and yummy most importantly:)  Here's all you need....

1 Pint of Heavy Cream
1 Stick of Butter
2 Tbsp. Cream Cheese
1/2 -3/4 C. Parmesan Cheese
1 tsp. Garlic Powder

OK, here's how I roll.....in the saucepan, combine the butter.....

    and the heavy cream....

and the cream cheese....(NOTE: DO NOT use more than 2 Tbsp of cream cheese, it will turn out too thick)

Simmer until all is melted, and mixed well.  Add the parmesan cheese...

and the garlic powder.  Simmer on low about 30 minutes.  YOu may want to add a little salt or pepper.
Boil your noodles.....


Add aldredo sauce over cooked noodles. Add some chicken or broccoli if you'd like.  Garnish with more parmesan cheese and there you got it. 
I'd show you a picture of the finished thing, but my kids were not
about to wait for me to take a picture before they ate.

  Happy Sunday:)  The weather is AMAZING today!  So, don't ask me why I'm in my house blogging;)  Oh yes, I know why....because I have seen the movie, "Julie & Julia" one too many times.  I'm actually about to "try" and make Julia Childs' homemade croissants.  Wish me luck! Evie

Creamy Au Gratin Potatoes

   Happy Friday!!!!  I was going to blog this last night, but our weather was CRAZY!  We got like 10 inches of rain in a few hours, then tornado sirens kept going off.  My backyard looked like a sister lake to Table Rock.  Anyways, all is fine now and it's so cool out today. 

  Last night as I was preparing dinner, I was thinking about how much I love the potatoes that were cooking away in the oven.  So....I grabbed my camera and took a few shots, (I would have made it prettier if I knew it was going on my blog, sorry) as soon as it came out.  I know this is a "photography" blog, but come on....my life is not just about photography.  Even though my hubby would disagree with that;)  So, I thought I woud share a recipe.  Here's where you'd go to find the same awesome recipe for Creamy Au Gratin Potatoes.  Although I have to say, I never have onions in my house it seems, so I never add them.  Also, I always mean to add bacon bits.  yummm.

Super Duper Easy Peanut Butter Cookies

OK, when I mean easy, I mean easy.  Check this out...you can make this with THREE ingredients!!!!  Chances are, you have these in your kitchen as you read this;) 

2 Cups creamy peanut butter
1 Cup sugar
2 eggs

Mix all three ingredients until well blended.  Refridgerate for 30 min.

Meanwhile, preheat oven to 325 degrees.

Once 30 min. is up, roll out dough into balls.  Place 2 inches apart on ungreases baking sheet. (not gonna lie, I always use my pizza stone to bake cookies.  I have never gone back to cookie sheets since. I guess I should call it my cookie stone;))  Flatten each cookie in a criss-cross (makes you wanna jump, jump...lol, ok I'm a nerd.  I digress.)  pattern with a fork. 

Bake about 20 min. or until lightly browned. 

BUT, it's possible you're not done....if you're me you're not anyways.  I like my cookies really pretty if at all possible.  Because well, I blame my Mom:)  For this next part you will need a chocolate bar ( I always buy Hershey's bar) and peanuts.

Take the peanuts and throw them in your blender.  About 1 cup will do.  Turn on chop mode and use your blender once for the year:) 

Take the chocolate, break it up into squares and put it in a microwaveable bowl.  Turn it on for 2 min. and be sure and stir every once in a while.

Take your cookie and dip side into melted  chocolate.



Next, take the melted chocolate side and dip into chopped peanuts.

Place cookies on wax paper and put them in the fridge a few min. to harden.
And there you have it. Beautiful, yummy peanut butter cookies!  They look great on a plate.  Ready to welcome home your little one from school, or your loved one from work:)



If you want to give them away as a gift, that works too.  Grab a tin, some tissue paper and maybe a vintage Christmas ornament. Although I don't recommend a deep tin like this one.  They were sinking fast!  Sorry peeps, it'a all I had;)
